Take a Polish-Slovakian favorite that includes hearty egg noodles, onions, garlic, bacon, and sweet cabbage, and you have a Pittsburgh favorite. Haluski offers a mild savory-blend of mouth watering ingredients that are heightened even further when they are submerged into a steamy bath of butter. Haluski sounds complex, but is actually on the list of one of the least complex dishes to make, yet the final results of the delectable dish will convince you that it is food for the Gods. The original recipe was brought over from Polish and Slovakian immigrants who settled in the Pittsburgh region, making the Steel City their home. Luckily, they shared the recipe and now we can all enjoy some of the best Haluski on the planet, because it is now a part of Pittsburgh's best kept secret that can be found at Kelly O's Diner right in the heart of the 'Burgh.'
Guy Fieri from Diners, Drive-In and Dives caught wind of Kelly O's and popped in for a visit so that he could unlock the secret to Kelly O's haluski after he sampled what Pittsburgher's refer to as a piece of heaven. Kelly diced some sweet onions and added some garlic salt to a generous amount of butter, allowing the beginnings of something beautiful to erupt. The caramelized-onions were then smothered by a whole head of sweet-green cabbage and allowed to slow cook in a steamed process. One pound of bacon joined the party bringing with it the ultimate taste that takes it to another level. Kelly rounds it all out by marrying all of the ingredients to fluffy cooked egg noodles.
Hungry patrons happily await for the Pittsburgh version of haluski to bring them to that happy place that they remember from childhood and Kelly O's manages to deliver. Kelly O'Connor is Irish, and even though she has no former culinary training, she has mastered several house favorites, including the popular European dish that varies from region to region that dates back for many generations from the people with Slovakian and Polish origins. However the Romanian gypsies, Hungarians and Ukrainians all claim that the creation was invented by the people of their country. Thankfully none of this matter's to the hungry patrons that have turned her diner into a Pittsburgh favorite for several reasons. Kelly's dedication and support of local products are just one of the reasons, but the biggest reason that patrons return is that everything is fresh and homemade from scratch and the atmosphere is always welcoming.
